Christmas Pasta and Hash Brown

I call this Christmas Pasta because of the basil-green pasta and red sauce-- quite resembles the common Christmas floral arrangement ingredient, poinsettia. Side it with this homemade fast-food style hash brown, you and your diners will surely feel festive any time of the year!
Ingredients
basil pesto sauce
eggplant
cauliflower (optional)
bell pepper
canned diced tomatoes
soy sauce
sugar
black pepper
Italian seasoning
3 medium-sized potatoes
3 teaspoons milk powder
1 egg
a pinch of salt
about half a cup of flour
1-2 tbps oil or butter
Procedure
BASIL-GREEN PASTA
Cook pasta according to package instructions for perfect al dente texture.
If your pesto sauce is not so oily, drizzle cooked pasta first with olive oil before tossing in a spoonful (or more) of pesto sauce. Then, mix well. Set aside.
RED SAUCE
Stir-fry eggplant.
Add cauliflower after a couple of minutes. Then season with black pepper and Italian seasoning.
When they are cooked according to almost desired doneness, add bell pepper.
Another couple of minutes later, pour in a can of diced tomatoes. Stir a little then wait until it boils, then pour in soy sauce and sugar. Add more Italian seasoning and black pepper.
Top your basil-green pasta with this sauce. Add cheese for another layer of flavor. Or not. ^_^
HASH BROWN

Boil, microwave or pressure cook small chunks of potatoes until mashed-potato tenderness is reached. Drain water then transfer to a large bowl.
Put the last five ingredients in our list above into your bowl, plus a pinch or two of black pepper. Mix well while mashing chunks of potatoes.
On a cling wrap, scoop 2-3 tablespoons of your hash brown mixture and shape it however you like using the cling wrap. Then wrap it well and put in the freezer for about 30 minutes (upto several months, if you love freezing ready-to-fry hash browns).
Directly fry the frozen hash browns twice on each side. I didn't remove them from the pan, just turned it to the other side after perfectly browned, then wait for the other side to be perfectly brown again, then turn again and cook for a minute or two, then the other side again for a minute or two.
Then drain oil onto a paper towel then serve with your pasta!
